You Grab More than 15 Apple Recipes in Mennonite Cookbooks

What do I do with all these apples?

There has been a great abundance of apples this year because our area has had lots of rain this summer and no damaging hail storms.  The trees had been loaded and it took a lot of picking.  But we don't want them to go to waste either.  The ones that do fall are collected and taken to a cider press and squeezed into apple juice.  Some is made into apple butter.  Lots of things to do with the apple harvest.  So I resort to my Mennonite Amish Recipes

There is just so many different recipes in those cookbooks.  In "Passing Along More Countryside Favourites" on page 74, the recipe for Apple Steusel Muffins is a cinch to follow.Page 93 in the same Mennonite cookbook is the spot I turn to for Grandma's Apple Fritters.  Mmmmm ... just makes me so hungry.  Can you smell them baking in the oven, too?  Almost!

Try this recipe until your order is shipped to you:

White Apple Brownies

2/3 cup butter or margarine

1 cup brown sugar

1 cup white sugar

2 eggs

1 teaspoon vanilla

2 cups flour

1/2 teaspoon salt

1/2 cup chopped nuts

1/2 cup chopped apple

Cream butter, sugar and eggs; add dry ingredients.  Stir in apple and nuts.  Bake in a greased 8 inch X 12 inch pan for 25 to 35 minutes at 350' F.  Do not over bake.  Cut in bars.  Sprinkle with powdered sugar.  That's right, there is no leavening.
